I quickly gobbled my bun up. Unfortunately, there weren't many Rotiboy buns to go around so I was left craving for more. It is like a thin coffee butter cookie spread over the bun.
Bahan Membuat Mexican Bun / Coffee Bun

- 160 gr terigu pro tinggi.
- 100 gr terigu pro sedang.
- 50 gr gula pasir.
- 1,5 sdm susu bubuk.
- 5 gr ragi instan.
- Bahan B :.
- 2 btr kuning telur + susu cair dingin ditimbang menjadi 160gr.
- Bahan C :.
- 35 gr mentega/margarin.
- 3 gr garam.
- Topping Coffee :.
- 55 gr gula halus.
- 60 gr tepung terigu pro rendah.
- 1 btr putih telur.
- 1 sachet kopi instan.
- 1 sdt coffee bubuk (saya nescafe).
- 50 gr mentega.
- 3 sdm air panas.
- Bahan Isian :.
- Keju spread / keju moza.
Langkah Memasak Mexican Bun / Coffee Bun
- Campur bahan A dalam wadah, aduk rata. kemudian masukan bahan B, uleni sampai kalis. istirahatkan 30 menit sampai mengembang 2x lipat..
- Setelah mengembang kempiskan, bagi adonan masing2 60gr. pipihkam adonan, masukan isian keju, bulatkan dan diamkan 30 menit sampai mengembang..
- Kocok gula halus dan mentega hingga menjadi pucat warna nya, lalu masukan larutan kopi, terigu, lalu aduk sampai rata..
- Masukan topping kopi kedalam plastik, lalu semprotkan diatas adonan roti yang sudah mengembang. panggang dalam oven 170 derajat api atas bawah selama 25 menit. angkat dan sajikan..

As if hot, fresh-from-the-oven bread wasn't good enough, these delicious coffee buns also reward you with the most irresistible baked. This bun is a purely Asian creation. It doesn't seem to have anything to do with Mexico although buns with a cookie-like topping are reminiscent of conchas. You can leave out the coffee and have a plain vanilla topping.
